Ingredients
200g dates, dried
250ml milk
1 tsp bicarbonate of soda
115g butter
115g brown sugar
200g self-raising flour
1/4 tsp cinnamon powder
1/4 tsp ginger powder
A pinch of nutmeg powder
Method
Boil dates with milk till soft. Mash or puree them. Add bicarbonate of soda to the dates. Cool the dates mixture. Mix self-raising flour, cinnamon powder, ginger powder and nutmeg. Add butter and sugar to the dates mixture. Mix till well blended. Add flour mixture and about 100 ml of water. Pour the batter in a greased ovenproof dish and bake at 180 Degrees C for about 30 minutes.
Toffee Sauce
Ingredients
115g butter
115g muscavado sugar
150ml double cream
Method
Cook the above on low heat till sugar is dissolved.
