Mexican Vegetarian Chilli

Ingredients

2 large Potatoes – peeled & diced

1 large Onion- chopped

2 cloves Garlic – minced

1 Yellow pepper- diced

1 Red pepper – diced

1 Green & 1 red chilli – chopped

½ tsp Cinnamon powder

1tsp Cumin powder

½ tsp Chili powder

400gms Chili beans

400gms Diced tomatoes

1 cube Vegetarian stock

¼ cup Coriander leaves- chopped

2tbsp Olive oil

Method

Mix diced potatoes with 2tbsp olive oil and ¼ tsp each of cinnamon, cumin , salt & red chili powder. Roast in an oven for about 30- 35 minutes.

Heat oil and sauté onion, garlic and peppers for a few minutes. Add the chilies, coriander leaves,  cumin powder, cinnamon powder, chili powder.

Add tomatoes and chili beans along with stock cube. Cook on slow flame for about 20 minutes. Add water if  necessary while cooking.

Serve hot.
