Indonesian Vegetable Curry

Ingredients & Mehtod A

6 Shallots- chopped

3 Cloves garlic-chopped

3tbsp Oil

Fry shallots and garlic in till brown. Blend it into a paste.

Ingredients & Method B

3 Fresh Red Chilies

4 Hot chilies

4 Candlenuts

1’’ Fresh turmeric

Boil the ingredients B till chilies are soft. Blend it into a paste.

Ingredients & Method C

500gms Vegetables( long beans, cabbage, baby corn,  peppers)

250ml Coconut milk

1stalk Lemon grass- bruised

4 Salam leaves

2-3’ Galangal-peeled & bruised

3’’ Ginger-peeled & bruised

2tbsp Oil

1tsp Coriander powder

½ tbsp Palm sugar

Salt to taste

Heat oil and fry galangal, lemongrass, salam leaves and ginger.

Add the boiled chili paste and coriander powder.

Sauté and add fried onion paste and the vegetables.

Fry for a couple of minutes and add about 2 ½ cups of water, salt and palm sugar.  Simmer till the vegetables are about done and add the coconut milk. Cook for a couple of minutes more.

Serve with steamed rice
