Fried Rice with Edamame and Mushrooms

2 cups Brown Basmati Rice
3 Cloves Garlic – minced
2 tbsp Ginger – minced
250 gms Shitake Mushrooms – sliced
1 cup Edamame – shelled
2 tbsp Lime Juice
2 tbsp Soya Sauce – light
4 stalks Spring Onions – chopped
½ tsp Red Chili Flakes
1 tbsp Oil
Salt to taste

 

  1. Soak rice for about 20 minutes.

  2. Cook the rice in EuropAce Low Carb Steam Rice Cooker.

  3. Heat oil and fry ginger and garlic till garlic is brown.

  4. Add mushrooms and edamame. Cook for a few minutes.

  5. Add the rice followed by light sauce, lime juice, chili flakes and spring onions.

  6. Adjust seasoning and mix well till heated through.
