Coconut Rice Pudding with Lemon Zest & Berries

1 Cup Rice – Basmati or Jasmine rice

500ml Coconut Milk

½ Cup Sugar

½ Cup Coconut- coarsely grated & roasted

¼ Cup-1/2 Cup Condensed Milk

2 tsp Lemon Rind

1 tsp Vanilla Essence

1 Cup Mixed Berries


Cook rice in Europace low carb steam rice cooker.

In a pan warm coconut milk and add the cooked rice.

Cook on medium to low heat till the rice is well mixed and comes to a pudding like consistency.

Add toasted coconut, condensed milk and vanilla essence.

Cool and mix in lemon rind . Chill.

Garnish with toasted coconut, mixed berries, kiwi or any fruits of choice.
